How about Disney World? This would be a wonderful place to help keep the magic alive!

What's entertainment to you? Any college town will have a good local music scene. How long are you going away for? If just a weekend, I wouldn't worry too much about entertainment, because you want to just spend time with each other. There are beautiful lakeside cabins in Maine and New Hampshire, which would be cooler weather wise. Seattle is another city with a cooler temperature, but is a very large city. If you have a passport, why not take a trip to Montreal? It's also cooler there, and a very lively city. Also has the bonus of being close to New York.

You could look into a bed and breakfast in a small town or near a winery. Besides Napa Valley, there are wineries all over the U.S. They usually offer Bed & Breakfasts as well as other lodging, shops, restaurants, and local musicians. It's romantic and much different than the city scene.

Seattle.

Mild climate and very easy to navigate.

EDIT TO ADD: FYI, Seattle is large in population but rather small in area. Trust me, I've lived here nearly 4 decades! It's really tourist friendly, meaning you can walk from attraction to attraction or catch a cab. There are plenty of little romantic cafe's and places to eat, fantastic local music, art, music, ballet, you name it.
