How much money do you want to spend?
Can you / will you travel abroad, or only in the U.S.? (Do you have a passport?)
This is critical information to know before we can recommend anything.
My fiancee and I are going to a Sandals in Jamaica in August. It's great -- absolutely all-inclusive (no tipping, no charge for 95% of activities, no charge for food or booze). We got a 50% off deal, and my fiancee cashed in airline miles so the whole thing is only costing us a few grand. We would have never been able to afford an international honeymoon otherwise. But we're really excited to go because we want (a) to lie on the beach for days, (b) to have outdoor activities at our fingertips, (c) to have nice, tropical weather, (d) to be treated really well, (e) to have lots of alone time.
If you live in LA, where the weather's pretty nice most of the time, maybe consider a place with good culture and nightlife that's really different! South Korea, or Hong Kong, or Ibiza or Rio or Japan or NYC.
A sandals resort is not going to have a "great night life." There are going to be a few bars, and maybe one place to dance, but it's not like a club scene in a major city or in a party destination. Most people are there to be romantic, and to be romantic with each other.

Most Sandals resorts are in places that are going to have AT LEAST a Florida-like climate, maybe worse.
Maybe you should take a cruise! There are lots of BIG cruise ships that have multiple dance clubs, but you get the feel of an all-inclusive resort (lots of free food, not much tipping, lots of activities available, multiple destinations). The only thing that sucks is that your cabin will probably be pretty small unless you really shell out the $$$.
