The bride (and sometimes the groom) say a prayer to Mary during a Catholic wedding ceremony. When is this done? After the ring swap, before the Prayer of the Faithful, when?

At Catholic weddings, I've seen a prayer to Mary where the bride brings some flowers over to Mary's statue and a little prayer is said. I don't remember when in the ceremony this was done, but your priest will know.

I was in a Catholic wedding last weekend.
They layed flowers at Mary's feet right before communion.

Most churches will let you do a devotion to Mary...it is usually done before the rings, but it depends on the church. Talk to your priest to make sure of the placement.
